Local boy and proud of the areas
culinary tradition, Gilles Ferran has remained true to the family
recipes he has adapted for the restaurant. He knows the secret corners
where wild Cepes grow and he creates dishes to make a grandmother
proud. From the trout of the stream, to lamb from the pastures of
the high Pyrenees, his dishes retain their roots in the countryside.
